When it comes to honey, dark is better

(HealthDayNews) -- If you're looking for health benefits from honey, think dark.

Researchers at the University of Illinois at Urbana-Champaign found that dark honey has more antioxidants than light-colored honey. Antioxidants counter the effects of free radicals, which can damage DNA and contribute to arthritis, strokes and cancer.

Researchers analyzed honey from 14 floral sources. Honey made with nectar collected from Illinois buckwheat flowers had 20 times the antioxidants as that made from California sage.

Although honey cannot replace fruits and vegetables as a source of antioxidants, it has a lot to offer as a replacement for table sugar, which has little value other than as a sweetener.
